Fajita Chicken Recipe

So my last post was about crock pot chicken and I promised I would share some recipes that I use that my family loves. It turns out you can add shredded chicken to just about anything. My go to meal is chicken fajitas. There are a couple of reasons I love fajitas. One, as a Mexican food loving family we always have toppings like salsa, sour cream and cheese. Two, fajita seasoning is one of my favorite recipes to make up.

Confession: I do not follow recipes well.

If I don’t have an ingredient I just skip it or swap it out for something “similar” (I use that term loosely). So if I don’t have a packet of taco seasoning I just start pouring spices into a bowl until I like how it smells.

Here are my go to mix ins:

Chili Powder (necessity)

Cumin (necessity)

Everything after this is totally optional

Onion Powder

Garlic Powder

Red Pepper Flakes


I throw that bowl of seasonings into a pan of shredded chicken and a little bit of water. It only takes about ten minutes to get that hot and seasoned on the stove top. After the chicken is ready I literally throw it on a plate with anything.

You can eat it like tacos on tortillas with any sort of toppings (lettuce, tomato, cheese, sour cream, salsa)

You can eat it like nachos on tortilla chips (great GF option)

You can eat it plain or with rice or even mix it in with pasta and salsa.

You can never go wrong with Mexican food. This is one those great ways to use the shredded chicken from your crock pot and never have to go to the grocery store because you probably have the ingredients in your house already!
